Four from-the-earth reasons I love fall

Unlike most people, I’m happy to see summer end—no more heatwaves, no more frizzy hair, and no more sunburn.

There’s a lot to love about fall—from the cool, crisp nights to the changing leaves—but my favorite thing is the harvest. Here’s how I’m planning to take advantage of the season’s bounty. Join me?

Pumpkin
What’s inside: Vitamin A for eye health, plus fiber and potassium.
Make: Oatmeal with cinnamon, nutmeg, and a heaping tablespoon of canned pumpkin.

 

Kale
What’s inside: Cancer-risk-reducing antioxidants and vitamin K for stronger bones.
Make: A smoothie of kale, spinach leaves, pear, banana and almond milk. (It’s good! We swear!)

Pomegranate
What’s inside: Big doses of vitamins C and K.
Make: Thaw frozen seeds and use as a salad topper.

 

Sweet potato
What’s inside: Immune-system-boosting beta carotene, which may also decrease the risk of heart disease and cancer.
Make: Baked sweet-potato fries topped with paprika, cumin, chili powder and cayenne pepper.
