I had a watermelon sitting around for over a week. I’d intended to serve it at a barbecue, but we ended up having more than enough food without it so I left it stashed. (Some hostess I am.) Problem is, how am I supposed to devour an entire watermelon quickly enough to keep it from going bad? Solution: Get creative.
I ate it plain ol’ sliced, of course, but I also marinated watermelon cubes with balsamic vinegar, fresh mint and some tomatoes for a super delicious salad. Blended it up, watermelon puree spiked with gin made for a really yummy cocktail. It also made for a good salad topper over lettuce and toasted pine nuts. Before I knew it, the watermelon was gone.
