This summer, yoga instructor Gina Stickney is taking her skills as a teacher beyond Philadelphia. Stickney will be taking her fifth trip to Guatemala’s La Limonada, one of the largest urban slums in Central America, where she will be piloting a three-month yoga program as part of Lemonade International. A healthy fast-food spot comes to the Residences at the Ritz-Carlton

Get your appetites ready, fellow healthy eaters. Freshii, a Chicago-based chain of healthy fast food joints, opens at the Residences at the Ritz-Carlton today and we can’t wait to try it! The menu is loaded with a variety of fruits, vegetables and whole grains. First, you pick your “style,” choosing from salads, wraps, brown rice bowls or soups. The rest of what goes into your meal is up to you. Pick from a healthy selection of ingredients including edamame, grilled tofu, avocado, mango, spicy peanut sauce, even organic grilled steak. You can check out their website here to see all the options. And while you’re at it, glance over at the nutrition stats conveniently planted on the right side of the page. To work out out or to not work out on Christmas Day? On one hand, lacing up those sneakers for an early, Christmas morning run can set the rest of the day off on the right foot (i.e., there’ll be less chance you’ll scarf down the chocolate goodies in your stocking before breakfast). And of course, burning a few extra calories before sitting down to a daylong feast equipped with mass amounts of eggnog and cookies can never be a bad idea. But between traveling to Grandma’s and opening presents with your loved ones, who has the time to work out? And besides, after the busy days leading up to Christmas, shouldn’t it be the one day you give your body a vacation?

If for some reason you haven’t heard by now (or read our story about the recently released documentary, Chow Down), Bill Clinton adopted a nearly vegan diet diet several months back—and lost 24 pounds as a result. The reason: to save his heart, which needed two stents earlier this year. The food guru he credits: Caldwell B. Esselstyn, Jr., director of the Cardiovascular Disease Prevention and Reversal Program at the Cleveland Clinic Wellness Institute.

Esselstyn created the diet after examining countries where heart disease was nonexistent. The main dietary difference between American diets, where heart disease is high, and the diets found in the healthier populations found of the central highlands of New Guinea, central Africa, parts of China, or Northern Mexico? Fat. Americans eat a lot more fat. READ MORE

I was incredibly excited to hear New York Times columnist Mark Bittman speak at the Free Library a few Mondays ago, on tour for his latest book, The Food Matters Cookbook.  And to all you fellow “Minimalist” readers, I’m happy to report that he didn’t disappoint.  Complete with his trademark witty banter, he discussed food trends and the negative impact they’ve had on both our diets and to the planet to a crowd of more than 350.  I learned everything from the actual cost of a 99-cent hamburger ($200, after adding up production costs, ensuing environmental damage, and future healthcare expenses for the person who ate it) to how ridiculous our screwed up diet of processed foods really is:“No one is born craving Skittles, or doughnuts, or Whoppers,” he said, playfully reminding the audience that there was a time when Americans used to “eat real food, and Goldfish still swam.” READ MORE
